On Occasion I'll Remember 02

It was my introduction to stewardship at The Riverwood Conservancy that connected me to various other organizations and the superbly wonderful people that make up of them. Evergreen is another notable name for all the tree planting events they organize in the GTA. No only are these always informative and extremely helpful, I always have a lot of fun roping my friends into tree planting adventures. Looking back on all our photos posted on our school club's page makes me a very happy person. 

They also hold very notably amazing year-end dinners for their volunteers! The evening event was held at their headquarters in Toronto at Brickworks. 





We started with various veggies and dips; hummus, salsa, guacamole. All super delicious!

Eventually, dinner was served and really inspired some healthy dinner ideas. I'm getting hungry just looking at these. All the dishes were super flavourful and served by Evergreen employees in a way to give back to the volunteers who give back for so little, but I would consider this dinner a lot. 


Roasted beets with pine nuts. 


Steamed kale and swiss chard. Seasoned with olive oil and sea salt. I felt so cleansed after eating this.


Roasted sweet potatoes. My love. 


Turkey meatballs that were served with an elderberry jus. 


Here's my final plate. There was also an organic spring mix salad served with your choice of two vinaigrettes and croutons. I shamelessly downed two plates of this delicious goodness and have no regrets. Everything tasted fantastic together. 


Zero regrets for it all.
