Crustless Quiches

Happy hump day!

I am definitely an egg enthusiast, but weekdays make it hard for me to eat as much egg as I want for breakfast. (that doesn't stop me from making eggs and toast when I get home from school though). 

This recipe is extremely versatile, so you can really add whatever your heart desires! For these photos, I layered steamed broccoli, green onions and ham with Parmesan cheese. 





Crustless Quiches
Recipe makes 12

5 eggs
1 CUP broccoli (steamed + crumbled)
1/2 CUP ham (diced)
Salt + Pepper
Green onions
Cooking spray

(Pre-heat overn to 350F)

1. Steam your broccoli for approximately 8-10 minutes until tender. Crumble, season with salt + pepper and set aside in a bowl.

2. Prep your muffin tin by greasing with cooking spray or coating each with an oiled paper towel.

3. Whisk your eggs and season with salt + pepper.

4. Spoon broccoli into each muffin compartment until half full. Add ham and green onions until completely full. 

5. Fill each compartment with egg until full. Top with parmesean cheese and bake for 20 minutes or until a toothpick comes out clean. 

Now you're set with breakfast for the week!
